    Phytic acid (phytates)

    Antinutrient present in whole grains, legumes and seeds. Binds to iron, zinc, calcium and magnesium in the intestine, forming insoluble complexes and reducing their absorption. Soaking (8 to 12h), fermentation and germination activate natural phytases which hydrolyse phytates, significantly improving mineral bioavailability.
