    Casein

    The main protein in milk (80% of total proteins), forming micelles that coagulate in an acidic environment. Characterised by slow digestion (6 to 8 hours), unlike whey proteins which digest rapidly. This slow kinetics makes it particularly valuable before sleep to support overnight protein synthesis. Found in high quantities in cheese, cottage cheese and Greek yoghurt. May be problematic for people intolerant to bovine proteins (distinct from lactose intolerance).
