Desaturase

Enzyme that adds a double bond to the carbon chain of a fatty acid, making it more unsaturated. FADS1 is a delta-5 desaturase, FADS2 is a delta-6 desaturase. They act in alternation with the elongases throughout the essential fatty acid conversion chain.
