Glycation

Non-enzymatic chemical reaction between glucose and proteins (particularly collagen and elastin). It produces compounds called AGEs (Advanced Glycation End-products) that stiffen collagen fibres, yellow the skin and accelerate visible skin ageing. A diet high in fast sugars and foods cooked at high temperatures promotes glycation.
