Protéine Tau
Protéine stabilisant normalement les microtubules neuronaux. Elle devient pathologique quand hyperphosphorylée et glycosylée, formant alors les enchevêtrements neurofibrillaires (2e lésion d'Alzheimer). L'oléocanthal inhibe sa fibrillisation.
