Beta-glucan
Soluble polysaccharide composed of glucose chains, present in high concentration in oats and barley. Forms a viscous gel in the small intestine that slows glucose absorption and traps LDL cholesterol. Selectively feeds the bifidobacteria of the colon (prebiotic effect). EFSA has validated two health claims: reduction of post-prandial glycaemia and LDL cholesterol.
